Madrid, 1972. Diego Sandoval, Spanish National Gastronomy Award Winner in 2016, is in charge of all front-of-house operations and attends guests with the utmost care and attention. Self-taught and passionate about his job, he has 30 years of experience working in the family business. Over the course of his career, he has become an icon in the restaurant industry, notorious for his impeccable service and signature style, for which he has come to be considered an iconic maitre d’hotel in Spain.
Diego is also responsible for the management of the restaurant and the various companies of the Sanhuer Group, including Food Concept and Dulcemanía.
